Mediterranean Baked Sweet Potates

Simple and delicious!

Preheat the oven 180C (with fan).

Bake about 600g of sweet potatoes for 45’-1h.

Place in a large bowl:

  • 1/2 tsp ground cumin
  • 1/2 tsp ground coriander
  • 1/2 tsp cinnamon
  • 1/2 tsp smoked (or regular) paprika
  • 300g chickpeas
  • salt to taste

Mix well and bake the chickpeas for about 15’.

Tip in the cup of your blender:

  • 1/4 cup tahini
  • 1 tbsp lemon juice
  • 1 tsp dill (dried or fresh)
  • 3 cloves garlic
  • some plant-based milk to make it thinner
  • salt to taste

Blend until smooth. This is your sauce.

Additionally, you can mixed some chopped tomates, chopped parsley and chopped onions, with a bit of salt and/or lemon juice to accompany.
