Three Bean Soup

Soak 1/2 cup brown lentils overnight, then cook in a pressure cooker for 1’. Drain and put aside.
Water-fry 1 onion (diced) and one garlic head (chopped) in a large pot, then add:
- 1 tbsp ground turmeric
- 1 tsp ground coriander
- 1 tsp ground cumin
- 1/2 cup brown lentils
- 7 cups vegetable broth
- 1 1/2 cup red kidney beans, cooked
- 1 1/2 cup chickpeas, cooked
- 1 1/2 cup cannellini beans, cooked
Bring to a boil and cook for 5’. Then add:
- 6 cups fresh spinach, chopped
- 1 cup fresh parsley, chopped
- 1 bunch green onions, chopped
- 2 tbsp fresh mint, chopped (or 2 tsp dried mint)
- 1/2 tsp ground black pepper
- 1 tbsp madras curry power
Cook for another 5-10’.
