Corn Chowder Soup

Water-fry 1 diced onion in a large pot, then add:
- 4 cups vegetable broth
- 2 celery ribs, chopped
- 2 medium potatoes, diced
- 1 tsp smoked paprika
- 1 tsp dried thyme
- 1/2 tsp ground black pepper
- 1 lbs fresh or thawed frozen corn kernels
- 2 tsp lemon juice
- 1 tbsp fresh parsley, minced
- salt to taste
Cook for about 20’, until everything is cooked.
Scoop 2 cups of soup in a blender, and 1/4 cup rolled oats and blend until smooth. Mix back with the soup.
Serve in bowls and garnish each bowl with chopped parsley, 2 tsp nutrional yeast and optionally some hot sauce.
