Tacquitos

Soak 1 cup of black beans overnight.
Pre-heat the oven to 220C (with fan).
Cook 3 cups of chopped sweet potatoes, put in a large bowl.
Cook 1 cup of chopped carrots, put in the bowl with the sweet potatoes.
Cook the beans, put in the same bowl with the carrots and sweet potatoes.
Water fry 1 onion and 1/2 garlic head. After about 5’, add the following:
- 1 tsp chili powder
- a few green chilies, chopped
- 1/2 tsp onion powder
- 1/2 tsp smoked paprika
- 1/2 tsp ground turmeric
- 1/2 tsp ground white pepper
When cooked, add into the bowl. Mix and coarsly mash everything.
Take a scoope of the mixture, place on a tortilla and roll. Place the tortilla, seam down, on a baking sheet. Repeat for the other torillas.
Bake for 10’. Eat with diced avocados, cashew cream, salsa or any other extra you fancy.
