Brassica bake

A super delicious, super healthy, super tasty recipe! And the best way I know to eat your Brussels sprouts!

Pre-heat the oven to 180C (with fan, 200C without).

In large bowl, mix the following in a large bowl:

  • 2 cups broccoli florets
  • 2 cups halved Brussels sprouts
  • 1 large sweet potato, peeled and diced
  • 2 cups chickpeas
  • Juice of 1 lemon
  • 2 tsp garlic powder
  • 1 tsp salt (or to taste)
  • 1 tsp ground black pepper (or to taste)

Transfer to a baking tray and bake in the over for about 1h. Give the tray a shake from time to time.

For the dressing, mix the following in a medium bowl:

  • 1/2 cup Dijon mustard
  • 1/2 cup tahini
  • 1/2 cup water
  • 1/4 cup apple cider vinegar
  • 2 tbsp maple syrup
  • 2 tbsp lemon juice
  • Salt and ground pepper to taste

Mix the dressing with the baked veggies and enjoy!
