Walnut coffee cake

This is a vegan and healthy version of this classic, and it’s super easy to make.

Pre-heat the oven 160C with fan.

Mix in a large bowl:

  • 3 tbsp instant coffee powder, mixed with 1.5 tbsp boiling water
  • 300g atta flour (or some other wholemeal flour if you don’t have atta flout)
  • 50g brown sugar
  • 1 banana, mashed
  • 300 mL soya milk
  • 100g broken walnuts
  • 1 heaped tsp baking powder
  • 2 tsp peanut butter

Mix well and pour in a baking mould.

Bake for 45’ at 160C.
