Giant breakfast cookie

Super yummy and healthy recipe. It looks like a giant cookie, hence the name. The measurements are for 2 hungry people.

Preheat the oven 170C (with fan).

Toss in a smoothie blender:

  • 1 cup oats
  • 1 tsp cinnamon
  • 2 tsp goji berries
  • 4 tsp raisins
  • 4 medium dates
  • 2 dried figs
  • 2 tbsp nutritional yeast
  • 2 heaped tsp peanut butter
  • 1 medium ripe banana
  • 2 tbsp ground flaxseeds
  • 1 cup unsweetened soya milk

Blend until smooth.

Stir in 1 tbsp chocolate chips, 1 tsbp sunflower seeds and 1 tbsp pumpkin seeds. Pour in a baking dish (no need to grease it).

Top up with:

  • 1 tbsp chocolate chips
  • 1 tbsp sunflower seeds
  • 1 tbsp pumpkin seeds

Bake for about 40’. Let it cool for at least 20’. Eat directly from the baking dish.
