Lemon rice

A delicious South Asian side dish!

Cook 2 cups brown rice in a pressure cooker. Drain.

Squeeze one big lemon and cut the lemon skin in fine strips.

Fry 2 sprigs curry leaves with the lemon skin strips for 2’.

Add 1/4 cup cashew nuts and 1 tsp mustard seeds, fry for 2 more minutes.

Add 1 tsp ginger-garlic paste and 2 green chillies (sliced), fry for 2 more minutes.

Add the lemon juice, 1 tsp salt, 1/2 tsp turmeric, fry for 2 more minutes.

Mix with the rice, and that’s it!
