Vegetable biryani

Easy and tasty recipe from India. It does require specific ingredients, though…
For the biryani rice:
Soak 2 cups of brown basmati rice for at least 2h. Drain the rice and put in a pressure cooker. Add:
- 4 cloves
- 4 green cardamom (you can extract the seeds if you have time)
- 8 peppercorns
- cinnamon sticks
- 2 bay leaves
- 3 black cardamom
- 3 star anise
- 1/2 cup dried onion slices
- 8 cups boiling water
- 1 tsp salt
- 1 tbsp soya yogurt (optional)
Cook in the pressure cooker for 5’. Drain and put aside.
For the vegetable mix:
Clean the pressure cooker and put the following inside:
- 3 cloves
- 3 green cardamon pods (extract the seeds if you have time)
- 6 peppercorns
- cinnamon sticks
- 2 bay leaves
- 3 black cardamom
- 3 star anise
- 1/2 cup dried sliced onion
- 1 tsp turmeric
- 1 tsp chilli powder
- 1 tsp salt
- 2 tbsp soya yogurt (optional)
- 1 cup hot water
- 1/2 cup tomato
- 1 cup green peas
- 1 cup cauliflower or 1 cup green cabbage
- 1 carrot shredded
- 1/4 cup french beans
- 1 cup cooked chickpeas
You can add or change the vegetables according to your liking. Cook in the pressure cooker for 5’. Spread rice on top. Cook again in pressure cooker for 5’. Eat with a curry of your choice, or on its own.
